So, it was only a matter of time before he decided to bring his two passions together in a tailgate setting. Up Your next Tailgate with any of these Wine and Food pairings all courtesy of our wine and food pairing guru Mike Gee. Phlame the Phish
- 2 oz. Rum
- Filets of Dolphin (Mahi-Mahi) Snapper or Grouper
- Julienne Vegetables (eg peppers, asparagus spears, tomato)
- 1/2 cup white wine (Pascal Jolivet "Attitude" Sauvignon Blanc)
- A dash of Italian dressing
- A squirt of lemon (juice and/or slice of lemon)
- Tin foil
First, pour 2 oz. of Rum in chef. Let sit.
Then make a 'boat' out of the foil. Place fillet in boat, add veggies, wine, lemon juice (with slice if desired) and Italian dressing over it.
Cover and seal 'boat'. Cook on grill seven minutes one side. Serve with rice, potatoes, pasta, etc.
Wine Pairing:
Pascual Jolivet "Attitude" Sauvignon Blanc 2007 - As the name would suggest, this wine runs like Brandon Jacobs with a chip on his shoulder. Lean, crisp and clean with hints of citrus and bright acidity. Laiden with mineral and balanced by bright citrus fruits, this wine has become a house favorite and one that we hand out time and time again. This wine hits early with big fruit and finishes like Jacobs punctuates a drive by punching it into the end zone with a long, persistent finish.
Treana "Central Coast" Viognier 2007 - with the versatility of the third down back this wine pairs with almost any seafood. The wine has floral aromatics, intense stone fruit flavors, overtones of honey, and a particularly lush mouth feel. There's enough bright fruit to drink this wine right now, but enough acidity and minerality for Treana White to develop with age in the bottle - not a common trait among California white wines. We are hoping Hakim Nix will develop the same way with time!
